Healthy Snacks: Vegan Cowboy Caviar

Cowboy caviar. Even if it didn't taste absolutely wonderful, I'd still eat it, because the name indicates that this is an unpretentious food for tough cowpokes with a sense of humor. This is the perfect way to enjoy fresh veggies from the garden (with avocados and lime from the store if your are a North-Eastern Cowgirl such as myself). The dressing will make it difficult to stop snacking. This is the kind of snack you can pair with side items to make a satisfying meal.

  • 3 Cups Corn
  • 2 Cups Cherry or Grape Tomatoes, chopped
  • 2 Cups Black Beans
  • 1 Avocado, chopped
  • 1 Bell Pepper, chopped
  • 1/2 Cup Cilantro, chopped
  • 1/2 Cup Olive Oil
  • 1/2 Cup Apple Cider Vinegar
  • 1 Tablespoon Maple Syrup
  • 1 Cloves Garlic, finely chopped
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Cumin
  • 1/8 Teaspoon Cayenne Pepper
  • Juice of 1 Lime
  • 1 Onion, chopped

Directions

Place the corn, tomato, beans, avocado, bell pepper, onion and cilantro in a large bowl. In a jar with a lid, combine the oil, vinegar, syrup, garlic, salt, pepper, cumin, lime and cayenne. Secure the lid, shake it up for 15-25 seconds. Pour over the veggies, and then combine until everything is well coated. Put your boots up, and dip away with your favorite tortilla chips.
