Is there anything more quintessentially winter than a bowl of warm oats? Also, is there anything more quintessentially lazy than a bowl of warm oats? With this breakfast, I'm able to satisfy my winter cravings and penchant for morning lethargy in one fell swoop :) In all seriousness, though, these oats are simple and satisfying, and I recommend you try them this season. The earthiness of earl grey tea is rounded with vanilla and made creamy with a bit of tahini--though you can't taste the sesame butter even a little bit. When I offered some to my very picky boyfriend, he was delighted and noted that the tea doesn't overwhelm the oats, which is exactly what I was going for. It's a nice change from peanut butter oats, if I do say so myself. This breakfast is also a great choice if you experience winter blues. Earl grey tea is traditionally seasoned with bergamot oil, a citrus oil. In aromatherapy, bergamot oil is used to calm anxiety and lift the spirit--so take a deep breath of its pleasing aroma before you dig in! This weekend, I made a big batch of this oatmeal, and I plan to bring it to work for reheating throughout the week. I hope you'll do the same--or at least take some time to savor them this coming weekend.
Vegan Breakfast Recipes: Earl Grey Oatmeal
Recipe Type: Breakfast
YIELDS 4-6 servings
- 2 cups rolled oats
- 4 cups water
- 2 earl grey tea bags
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons maple syrup
- 1 teaspoon tahini (optional, but good for added creaminess)
- Toppings of choice
1. In a medium saucepan, bring water to a boil. 2. Once water is boiling, reduce to a simmer and add oats, tea bags, vanilla, and maple syrup. Simmer for about five minutes, or until water is absorbed. Remove tea bags. 3. Stir in tahini and serve warm with toppings of choice.
