Raw Vegan Recipes: Zoodles with Creamy Avocado Dressing

Zoodles, or zucchini noodles, have really started to make a name for themselves as more people explore the world of raw foods. If you're not familiar with them, I know that cold, crunchy noodles may not sound too appealing at first; but once you take that first bite, you'll understand why they have become so popular! Packed with plenty of essential nutrients like vitamin C, manganese, vitamin B6, and vitamin K, zoodles provide a wholesome meal that takes just 20 minutes to prepare. Best of all, zoodles will leave you feeling satisfied without that uncomfortable fullness after eating a meal of cooked pasta. The rich, creamy avocado coupled with the flavorful basil, dill, and rosemary makes the perfect dressing to coat the crisp zoodles, and the lime juice adds a hint of tartness that ties the whole dish together. You can pair this with a sweet smoothie to complement the savory main dish, or enjoy it just by itself. :)

Raw Vegan Recipes: Zoodles with Creamy Avocado Dressing

  • 3 medium zucchinis, spiralized
  • 1 avocado
  • 1 lime, cut in half
  • 1-2 basil leaves
  • 2-3 rosemary sprigs
  • 2-3 dill sprigs
  • 1-2 tomatoes, chopped
  • 1 clove garlic
  • handful green onions
  • 1-2 sprigs cilantro
  • handful leafy greens (optional)
  • 3 medium zucchinis, spiralized
  • 1 avocado
  • 1 lime, cut in half
  • 1-2 basil leaves
  • 2-3 rosemary sprigs
  • 2-3 dill sprigs
  • 1-2 tomatoes, chopped
  • 1 clove garlic
  • handful green onions
  • 1-2 sprigs cilantro
  • handful leafy greens (optional)

Directions

1. Slice off the tops and bottoms of the zucchinis, and spiralize them one at a time. If you don’t have a spiralizer, you can find them onine at Amazon, or possibly at your local health food store. Place the zoodles into a bowl, and set aside.
2. To make the dressing, simply cut your avocado in half, and scoop out the insides. Put them in a blender or food processor, and add in the basil leaves, rosemary, dill, and garlic. You can also squeeze the lime into the dressing, or cut it in half to flavor your dish at the end.
3. Blend up the ingredients until you have a thick, creamy dressing, and pour it onto the zoodles, or into a small cup if you’re serving more than one.
4. Chop up your tomatoes, and place them into the bowl with the zoodles. Add the cilantro and green onions on top. If you want to make a salad out of the dish, just grab a few handfuls of your favorite greens and mix them into the bowl.
5. That’s it; enjoy!
