Vegan Carrot Kiwi Yogurt Parfait

Yogurt bowls are so fun and versatile, aren't they? I love unsweetened milk yogurt because it's so easy to whip up and customize with different flavors. This Carrot Kiwi Yogurt Parfait combines roasted sweet carrot and a dash of maple syrup to make a treat. I love to layer mine with my favorite grain-free granola, fresh fruit, and coconut cream. These parfaits are perfect for a quick breakfast, or snack.

Vegan Carrot Kiwi Yogurt Parfait

  • sliced kiwi (for layering)
  • shredded carrot (for topping)
  • 2-3 roasted carrots
  • 1 cup almond milk yogurt
  • 1/4 cup granola
  • 1 tablespoon maple syrup
  • dash cinnamon

Directions

1. In a blender, add the roasted carrots, almond milk yogurt, and maple syrup and blend until smooth.
2. Layer with your favorite granola, kiwi, and shredded carrot.
3. Serve immediately.
