Vegan Pumpkin Apple Oatmeal 2 Ways

Autumn is my favorite season with its lively colors, comforting rainy days and fresh, crisp air. Only thing I don't like is the chilly weather but I found a perfect solution to this problem. Heartwarming breakfast food! Apple and pumpkin are great options during fall season to add to any of your dishes and they make oatmeal super creamy.

Vegan Pumpkin Apple Oatmeal 2 Ways

  • 240 ml almond milk
  • 2 tablespoons grated apple
  • 2 tablespoons pumpkin puree
  • 1 tablespoon maple syrup
  • 80 g oats
  • cinnamon
  • pumpkin spice mix
  • dried cranberries
  • 1 tablespoon vanilla extract
  • 1/4 tablespoon ground ginger

Directions

For the pumpkin oatmeal: Combine pumpkin puree, 40g of oatmeal, ground ginger, 1/2 tbsp vanilla extract, 120ml of almond milk, maple syrup, cinnamon and pumpkin spice mix in a saucepan over medium heat. Bring to a low boil then reduce heat to simmer. Stir regulary until a creamy and thick consistency is achieved (about 5 min.) Pour in a bowl and serve with desired toppings. I used dried cranberries. For the apple oatmeal: Combine 120ml of milk, grated apple, 40g oatmeal, maple syrup, 1/2 tbsp vanilla extract and cinnamon in a saucepan over medium heat. Same method as with the pumpkin version, bring it to a boil then reduce heat to simmer. Stir regularly until it becomes creamy and thick. Top with apple, dark chocolate or even with almonds.
