Although it doesn’t feel like it yet, I know spring is finally here because strawberries have started popping up at the fruit stand near my house. Strawberries are an obvious addition to salads or smoothies, but they also pair really well with pasta. I know everyone has some pasta at home right now because all of the grocery market shelves have been wiped clean for weeks. This is a great way to use up some of the pasta that has been stocked up on in your pantry.
This salad contains carbs, fruits, and veggies, making it the perfect pre- or post-workout meal. It’s refreshing and filling, and when we are allowed to gather in groups again, this would make a nice cookout or potluck side dish. This tastes wonderful served alone but would be even better with some sliced avocado on top.

- 2 1/2 cup cooked pasta
- 2 cups shredded kale
- 1 cup diced strawberries
- 1/4 cup diced shallots
- 1/4 cup crushed walnuts
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp garlic powder
- salt & pepper to taste
Directions
1. Prepare pasta according to package.
2. Add the kale to a small cooking pot. When the pasta is done cooking, strain the water from the pasta over the kale to steam it. Strain the kale.
3. Run the pasta under cold water to stop it from cooking and pour it over the kale. Stir in the strawberries, shallots, and walnuts.
4. In a small bowl, whisk together the vinegar, oil, honey, and garlic powder and pour over the salad. Mix well.
5. Season with salt and pepper.
