Black Bean Lime Stuffed Plantain

June 3, 2020
I always mention how much I love plantains because of how dirt cheap and versatile they can be. Depending on its stage of ripeness, a plantain can be prepared a million and one different ways. My preferred way is to bake them and this time I decided to stuff them when they came out of the oven. Plantains are popular in Caribbean cuisine so I used a few other island staples to stuff it with—black beans, cilantro, and lime juice. The sweetness of the plantain pairs well with the fresh, bright flavors of the filling.

I used a yellow plantain for this recipe and I think that is what will work best. Green plantains are too starchy and black plantains will be too soft. Once baked, you can stuff these with any kind of beans, seitan, or filling that you prefer. I served these alone but you could add some rice and greens on the side for a more substantial meal.
