Baked Tempeh With Apple Butter Glaze

While searching online for ways use up an excess of homemade apple butter, I came across a recipe for apple butter pork chops. Obviously, I wasn't interested in cooking with meat, but I liked the idea of using my apple butter in a savory application. The sweet and savory combination so, so good, I promise. The nice thing about this recipe, besides the short ingredient list, is that you can use this marinade with any protein or vegetable. I'm excited to try apple butter tofu, seitan, or even portobello mushrooms! This hearty and protein-rich dish will fill you with autumn vibes. Enjoy! :)

Baked Tempeh With Apple Butter Glaze

Recipe Type: Hearty Entrees
utensils YIELDS 2-4 servings

  • 1 8 oz bloc tempeh, sliced into strips
  • 1/2 cup apple butter (homemade or store-bought)
  • 1 tablespoon grainy mustard
  • 1 tablespoon olive oil
  • 2-4 tablespoons water water

Directions

1.. In shallow bowl, whisk together apple butter, mustard, olive oil, and water. Place tempeh strips in bowl and make sure it's coated in the apple mixture on all sides. Let marinade for at least 30 minutes. 2. Preheat oven to 400F. 3. Bake for 30 minutes, until tempeh is browning.
