3 Simple, Gluten-Free, Vegan Cookies With Just 3 Ingredients

3 ingredient vegan cookiesMy favorite kinds of recipes are quick and simple, but still delicious and filling. In my opinion, homemade snacks should be super easy to make so that everyone can enjoy them whenever they want. If the treats are simple and still super yummy, I am less likely to spend my money on processed sugar-filled things that don’t keep me satisfied for long. That’s why these 3 simple, gluten free vegan treats with just 3 ingredients each are among my favorites.

Breakfast Tahini-Oat Cookies 

Ingredients:

  • 1/3 cup (100g) tahini
  • 1 cup (100g) oats (GF if needed)
  • 1 cup (200g) pitted dates

Directions:

  1. Preheat the oven to 350°F (180°C).
  2. Blend all the ingredients in high-speed blender until a dough forms.
  3. Form cookies and place in baking sheet.
  4. Bake for 10-15 minutes.

Peanut Butter Cookies

Ingredients: 

  • 1 cup (160-170g) peanut butter
  • 1/4 cup (80g) syrup (I used date syrup)
  • 3/4 cup oat flour

Directions: 

  1. Preheat the oven to 350°F (180°C).
  2. If you make the oat flour yourself, blend oats in a high-speed blender until they turn into flour.
  3. Mix the Peanut butter and the Syrup together in a bowl until well combined.
  4. Add the flour and mix everything until its even.
  5. Form balls, place on a baking sheet and press into cookie form.
  6. Bake for 10-12 minutes until golden brown.
  7. Let cool for a bit before removing them from the baking sheet.

This recipe makes between 12-16 cookies depending on how big you make them. When they come out of the oven they are super soft. They taste good then, but if you wait for an hour or two they become more cookie crunchy.

No Bake Walnut-Date Balls 

Ingredients: 

  • 1 cup (110g) walnuts
  • 1 cup (200g) pitted dates
  • 2 Tablespoons cocoa powder

Directions: 

  1. Blend all ingredients in a high-speed blender until they form a crumbly texture
  2. Form the mixture into balls
  3. Serve right away or chill in the fridge for a bit first
  4. Store in air tight container

Use less or more cocoa powder depending on how chocolaty you want them.
