Vegan Fall Spiced Pear Tacos

October 26, 2022
I always like to make cinnamon sugar chips in the fall and pair them with some pumpkin hummus or a yogurt dip. This year I wanted to try something different by using them as a base for some tacos, inspired by the flavors of fall. These are far from classic tacos and resemble more of a sweet and savory dessert rather than a fresh meal. I had a bunch of local pears that finally ripened and I turned them into a fruity salsa to toss on top, followed by a creamy maple sauce drizzle.

These are so easy and fun to make and eat with a group of friends. I used pears because that is what I had available, but you can also use apples, or a combination of the two. I also kept my salsa raw for the health benefits, but it would be delicious lightly warmed over a stovetop. Feel free to add a scoop of vegan vanilla ice cream to really take this dessert to the next level.
