Vegan Curried Chickpea Salad

Last summer I had a curry chickpea salad at a bookstore café and I never really stopped thinking about it since. I finally had all of the ingredients for this recipe on hand, so I set an out on a mission to replicate this meal. I have made plenty of versions of curry before, but this is the first time I have made it to be served cold. The amount of herbs, spices, and vegetables used in this salad make it extremely nutrient dense. Between the chickpeas and the hummus, there is also a bunch of fiber and protein to keep you full.

This makes a nice-sized batch and is great to use as part of a meal prep throughout the week. I served mine alongside some greens but this would also pair well with an avocado or some steamed broccoli. As a bonus recipe, if you only follow step 1, you can make a delicious curry hummus that you can use as a dip or spread on whatever you like.

Vegan Curried Chickpea Salad

  • 2/3 cup hummus
  • 1 1/2 tbsp curry powder
  • 1/4 tsp black pepper
  • 1/2 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 3 cloves garlic, minced
  • 1 tbsp minced ginger
  • 2 15oz can chickpeas
  • 2/3 cup red pepper, diced
  • 1 shallot, diced
  • 2 tbsp scallions, diced
  • 1/2 cup carrots, grated
  • 1/2 jalapeño, minced
  • 1/4 cup dried cranberries
  • 1/4 cup cashews
  • 1/4 cup fresh cilantro, shredded
  • juice from 1 lime

Directions

1. Add the hummus, spices, garlic, and ginger to a large mixing bowl and mix well.

2. Strain the chickpeas and pour them into the bowl.

3. Stir in the veggies, cranberries, cashews, and cilantro.

5. Squeeze in the juice from the lime and mix well.

6. Refrigerate leftovers.
