Healthy Vegan Banana Brownie (Gluten-Free)

I love banana brownies! They are so soft and deep in flavor. This super moist chocolate banana brownie will simply melt-in-your-mouth.

This is made with simple, whole ingredients and is gluten-free.

Many people are still anxious when they hear the word VEGAN. They might think that vegan is complicated! Vegan is purely a stand against animal cruelty and exploitation. This change in lifestyle comes with a change of certain "ingredients" which nowadays can be easily found and very much accessible. Small steps do a lot!

Plus numerous studies show that switching to a vegan diet is associated with sustainable weight management, reduced risk of mortality and lower risk of heart disease. In addition, it’s also linked to the prevention and treatment of hypertension, high cholesterol and lowered risk of certain cancers.

Can you imagine how awesome is to eat better while not contributing to animal cruelty?

Healthy Vegan Banana Brownie (Gluten-Free)

Recipe Type: Allergen Free Sweets
utensils YIELDS 1 big brownie or 4 small cupcakes

  • 120g Ripe banana
  • 75g Wholemeal rice flour
  • 25g Cornstarch
  • 10g Psyllium husk
  • 20g Coconut sugar
  • 3g Dry yeast
  • 1/2 teaspoon Xantham gum
  • 1 teaspoon Cinnamon powder
  • 15 grams Raw cacao powder
  • 100ml Coconut milk
  • 1 tablespoon Coconut oil

Directions

1. Preheat the oven to 350°F.

2. In a food processor, purée the ripe bananas.

3. Add all the other ingredients (except the yeast and coconut sugar).

4. In the meantime, add some lukewarm water to the dry yeast. Add the coconut sugar and let sit for 10 minutes.

5. Once ready, pour the yeast mixture to the batter. Prepare a blender, puree the bananas.

6. Pour the mixture into a round silicon mould or cupcake moulds and bake for 40 minutes.

7. Remove the brownie or cupcakes from the oven and let cool.

8. Slice and enjoy!
