Carrot Cake Oatmeal Cookies

July 8, 2020
My dad is the hardest working person I know, so I always try to make him a batch of food or baked goods to give him one less thing to worry about during the week. Baked goods are easier for him to grab and go in the morning, so I tend to make these more often. Since carrot cake is his favorite, I used fresh carrots and spices and combined them with oats to create a delicious breakfast cookie. These are healthy and filling and they remind me of the Kind brand breakfast bars.

I used honey in this recipe but you can use any other sweetener you like including maple syrup, agave, or sugar. If I had maple syrup on hand, I would have preferred to use this because it amplifies the flavor of the spices. You can make these cookies any size, to make more or less depending on your preference.
