Vegan Peanut Butter Oreo Cookie Blondies

June 8, 2023
I live in the Lehigh Valley, an area in Pennsylvania that experienced some of the worst air quality index ratings in the world yesterday. While conditions are slowly improving, today seemed like a perfect day to stay inside and try a new recipe. I've tried white bean brownies and banana blondies, but wanted to experiment with some new flavor combinations.

These Vegan Peanut Butter Cookie Blondies are inspired by a new flavor I spotted at a local ice cream shop—peanut butter Oreo. Sadly, this flavor was not vegan-friendly, so of course I had to create something to satisfy my sweet tooth!

  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1/3 cup flour

  • 1/4 cup (or more) white chocolate chips

1. Put the chocolate cookies (like Oreos, which are vegan) into a secure plastic bag to crush them. I prefer to leave a few bigger chunks of cookie to add some texture to the blondies. Set this aside for later.

2. Drain and rinse the chickpeas.

3. Add all ingredients except for the chocolate chips and cookies into a blender or food processor. Blend until smooth, and pause to scrape down the sides of the blender if necessary.

4. At this point, I poured the batter into a bowl to make it easier to stir. Mix in chocolate chips and cookie pieces. Use your best judgment and add more (or less) if needed!

5. Pour into a pan lined with parchment paper. Bake for about 30 minutes at 350°F.
