Vegan Spirulina Cauliflower

Jivamukti, New York City. Walk upstairs from bustling Broadway, and find yourself at the cross roads of yoga, vegan cafe, and retail shop full of the most intoxicating scents, and shelves of books that feed the soul. Tall ceilings adorned with Indian colors, stained glass windows, and sweet yogi images transport you from chaos to bliss.

I experienced euphoria at Jivamukti last Fall over one of founder Sharon Gannon's creations in the cafe after a legendary yoga class. It sounds so simple, but it was the spirulina millet that sold me. On that wet, damp day, before splashing over the sidewalks, I enjoyed a bowl of food that filled me back up after expending sweat and my voice (chanting). I so fondly remember that dish since, but have adopted my own version. The cauliflower is light, yet full of protein. The spirulina is a complete protein, and benefits the immune system, and also contains anti-viral properties. This dish is not only soul food, but body food.

Vegan Spirulina Cauliflower

  • 1 head, riced in the blender Cauliflower
  • 1 Tablespoon Safflower Oil
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Garlic Powder
  • 3 Tablespoons Spirulina
  • 2 Tablespoons Nutritional Yeast
  • 1 Tablespoon Tumeric

1. Rice the cauliflower by chopping it to rice-size in a blender.

2. Heat oil in a sauté pan over medium heat, and then add the cauliflower with salt, pepper, and garlic powder.

3. After 5–10 minutes, after the cauliflower softens, remove from the heat. Add the Spirulina, nutritional yeast, and turmeric ( Adding these after the food is done heating preserves the healthful properties).

4. Mix until the cauliflower is evenly coated. Serve immediately. Finish with Bragg’s Liquid Aminos for extra flavor. To good health, and cozy eating!
