Vegan Cookie Recipes: Holiday Tea Cake Cookies

'Tis the season for festive holiday cookies! These light and fluffy cookies are a southern specialty and the perfect treat to curl up with by the fire or to give as a gift. Known in my family as "Other Mama's Tea Cake Cookies', this recipe has been a Christmas tradition in my family for several generations. However, this year I added a little healthy spin on the old southern recipe. To make it vegan-friendly, I substituted applesauce for the eggs and coconut milk instead of regular milk. Over the years, I have tried different ingredients such as coconut sugar and whole wheat flour. These all work perfectly fine, yet the tried and true white flour and white sugar works best. From my family to yours, I hope you enjoy them as much as we do.

Vegan Cookie Recipes: Holiday Tea Cake Cookies

  • 1 1/2 cups sugar
  • 1 cup vegan butter
  • 1/3 cup unsweetened applesauce
  • 1 tablespoon coconut milk
  • 4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Assorted sprinkles

Directions

1. Melt the butter and let cool to room temperature. 2. In a mixer bowl, combine the butter, applesauce, sugar, vanilla extract, and coconut milk. 3. Mix the ingredients until the mixture becomes smooth and creamy. 4. In a separate bowl, combine the flour, salt, and baking soda. 5. Gradually add the dry ingredients into the cream mixture, gently folding the dry ingredients into the wet. Dough should be thick, therefore, add more flour if necessary. 6. Make the dough into a tight ball and let set in the refrigerator over night. 7. Take the dough out of the refrigerator an hour before baking. 8. Once the dough has softened, add flour onto the counter and roll out small sections of the dough at a time. 9. Using festive cookie cutters, cut shapes out of dough, and cover with sprinkles. 10. Bake cookies at 350 degrees for roughly 10 minutes.
