Vegan Bread Recipes: Vegan Johnny Cake

My greatest memories of my childhood are when my family ate dinner together each night. Dinner always consisted of a meat, a vegetable, a potato dish, and bread, and no dinner would be complete without a tall glass of milk. My three brothers, my parents and I would join hands, and began each made-with-love meal with, "God is great, God is good; let us thank Him for this food. AMEN!" Time to time we would have johnny cake as our bread with the meal, and we all looked forward to these dinners for the bread alone. What a treat, to eat a sweet cake-like bread with dinner! As everything else on the table, it was made from scratch. The following is a vegan version that I now make for my family, and it too, is met with excitement as we gather around our little table.

  • 2 Cups Cornmeal
  • 1 Cup Flour
  • 1/4 Cup Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 Cups Almond Milk
  • 3/4 Cup Fresh Corn Kernals

Directions

1. Heat the oven at 350 degrees. Combine the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl. 2. Stir in the milk and corn, just until everything is combined. 3. Pour in to an 8 by 8 greased pan. Bake for 20 minutes, checking the center with a knife or toothpick to see that the cake is cooked through. When the cake is baked through, let it cool, but not entirely. You are going to want to use the heat to melt your favorite vegan butter spread on the bread.
