Vegan Loaded Potato Pancakes (Latkes)

March 27, 2019
A lot of times when people are looking for an excuse not to go vegan they will complain that it is too expensive of a diet. This is one argument that I will never understand when simple meal staples like potatoes exist. Potatoes are dirt cheap and super filling, and they can be prepared a million and one different ways. My favorite way to eat potatoes is to shred them and make them into hash browns. Hash browns are very basic so to add some substance I made these loaded. These are similar to potato latkes but they are heavier, making them more of a meal rather than an appetizer. Once you make the potato pancake, you can top it with whatever other veggies and sauces you would like.

Directions

1. Begin by grating your potatoes (about two small/medium sized). When you have two cups worth, lay the grated potatoes out on paper towels and then squeeze the water out of them.
2. Place the potatoes in a bowl. Add all of the ingredients from the flour to the almond milk to the bowl and mix well.
3. In a large pan, heat a couple tablespoons of olive oil.
4. Shape the potato mixture into a ball in your hands and drop it into the pan. Use a spatula to flatten it out. Continue with the rest of the potato mixture until it is all fried.
5. While the pancakes are frying, mix together the avocado, onion, bell pepper, and lime juice in a small bowl.
6. Top potato pancake with avocado mixture. Sprinkle with salt and pepper and hot sauce.
