Vegan Breakfast Recipes: Matcha Green Tea Chia Pudding

As the saying goes, "breakfast is the most important meal of the day." I couldn't agree more, which is what inspired me to develop this super-breakfast combining two "superfoods": chia seeds and matcha green tea. Chia seeds come from a flowering plant in the mint family and are rich in omega- 3 fatty acids, fiber and protein. The seed's ability to absorb moisture makes it hydrating to the body and important for digestive health. Matcha seems to be the latest trending superfood. However, this fine powder green tea has ancient roots as it was traditionally used in Japanese tea ceremonies. One serving of matcha equals 10 cups of traditional brewed green tea in terms of nutritional value and antioxidant levels. The presence of the amino acid L-theanine boosts concentration and increases endurance which can last up to 6 hours. This simple to prepare breakfast is a great start to your day and will keep you focused and energized throughout your day!

  • 3/4 cup Unsweetened almond milk
  • 3 tbsp Chia seeds
  • 1.5 tbsp Pure maple syrup
  • 2 oz Matcha green tea powder
  • 3/4 cup Unsweetened almond milk
  • 3 tbsp Chia seeds
  • 1.5 tbsp Pure maple syrup
  • 2 oz Matcha green tea powder

Directions

1. Add all ingredients together in a bowl and stir to mix.
2. Refrigerate overnight.
3. Top with fresh fruit if desired.
4. Enjoy!
