Vegan Black Raspberry Chocolate Chip Bread

July 15, 2020
I am lucky enough to have a bunch of black raspberry bushes in my backyard that ripen every summer. There is nothing better than picking berries right off the vine and bringing them into the kitchen to transform into a treat. Last week I was able to pick an entire pint, filled to the brim. My go-to recipe is usually jam because of how simple it is to make, but I wanted to try something new. I mashed the berries down with some sugar and baked them into a bread.

This is a great way to use up a bunch of wild berries. I added chocolate chips to this recipe to make a more decadent bread but you could substitute these for nuts if you want a slightly healthier version. This tastes great toasted a bit to slightly melt the chocolate.
