These Goji Berry Energy Bites are packed with protein, antioxidants, and healthy fats. Goji berries are a wonderful snack because they're extremely rich in free radical-fighting antioxidants, and they contain over 20 vitamins and minerals. These delicious energy bites are naturally refined sugar-free, gluten-free, and sweetened with pitted dates. I love goji berries in this recipe for the pop of color and tart flavor! If you don't have goji berries on hand, try subbing dried cranberries or another dried fruit instead.
- 1 cup raw cashews
- 1/2 cup goji berries
- 1 1/2 cups pitted dates
- 1/3 cup raw almonds
- 1-2 tablespoons hemp hearts
1. Add all ingredients to a blender and pulse until well combined.
2. Roll ~1 TBS balls and serve immediately.
3. Store in an airtight container in the fridge for up to one week.
