Recently I was given an abundance of apples from a woman with a tree in her backyard. To use them up I baked them into apple crisp, juiced them to make cider, and froze the juice in some popsicles molds. I am still too intimidated to attempt making a homemade pie from scratch, so I decided to make a raw soup using my last apple.
This soup uses apple and avocado as its main ingredients and herbs and spices to taste. I don’t think the ingredients would cost any more than $5 to make this. Plus, you only need to use half of an avocado for one serving so you could save and use the other half for something else!
Because this soup is raw, it maintains all of the nutrients the produce has to offer. It is packed with antioxidants, fiber, vitamins A, C, and E, and contains the anti inflammatory and detoxification powers of cilantro.
Raw Vegan Apple Avocado Soup
- 1 apple
- 1/2 avocado
- 1/2 onion
- 5-6 fresh sprigs cilantro
- 1 cup water
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- a pinch for garnish crushed red pepper
1. Add all of the ingredients except the crushed red pepper into the blender and blend until smooth.
2. Garnish with some cilantro sprigs and crushed red pepper and its ready to eat!
This is delicious as a raw, cold soup but you could also heat it up if you are craving something warm.
