Vegan Snack Recipes: Lemon Lavender Energy Bites

When I saw culinary lavender in the herbs section at the supermarket, I knew I had to grab some. I love experimenting with new flavors in the kitchen to come up with exciting dishes. But this flower was a little intimidating. It sat in the fridge for nearly a week because I realized I had no clue how to use lavender in food. The tips I read online were very adamant that a little bit goes a long way--unless you want it to taste like you're eating perfume or soap. No thanks. However, a little bit adds a floral element that is fun and fresh! I love the combination of lemon and coconut this time of year, so I added a small bit of lavender to these energy bites to intensify the flavors. You need these bites to energize you this spring! If you can't find culinary lavender or aren't feeling that brave in the kitchen, don't worry. These lemon bites will still taste delicious without it. Make a batch and enjoy eating them as a snack all week long.

Vegan Snack Recipes: Lemon Lavender Energy Bites

Recipe Type: Sweets
utensils YIELDS 8-10 balls

  • 1 1/4 cup cashews
  • 1/4 cup maple syrup
  • 1 tablespoon coconut butter
  • 1/4 cup shredded coconut
  • 1 lemon, squeezed
  • lemon zest
  • 1/2 teaspoon lavender, dried or fresh, flowering part only, minced

Directions

1. Place all ingredients in a high-speed blender and pulse until well combined and sticky.

2. Scoop out and roll into balls with your hands.

3. Refrigerate for 15 minutes, then serve!

4. Store in fridge for up to one week.
