Vegan Smoothie Recipes: Creamsicle Kumquat Protein Shake

It was 70 degrees here today, and it feels like spring has sprung in February. I'm not complaining because I always realize in those first few days of blissful spring weather just how much the sunshine and warmth elevates my mood. I've been shifting my cooking at home to incorporate spring fruits and vegetables. Citrus is in season, and I've been enjoying navel and cara cara oranges on a regular basis. This week I decided to pick up a container of these funny oblong orange things called kumquats. I love preparing new fruits and veggies, so I quickly did my usual google search to get an idea for how to prepare them. Kumquats are sort of counterintuitive fruits because the peel is the edible sweet part of the fruit whereas the juicy interior is very sour. I'm always trying to come up with new protein shake ideas because they're a staple meal that I enjoy on a regular basis. I created a citrus-inspired shake with my kumquats that is so fresh and delicious! If you don't care for the sour interior of the fruit, squeeze out the juices prior to slicing like I indicate in the instructions below. You'll love the sweet and tangy taste of this shake-- it's wonderful first thing in the morning to energize you for the day. If you can't find kumquats, the shake will also work without them, but I hope you get the opportunity to try this unique fruit!

Vegan Smoothie Recipes: Creamsicle Kumquat Protein Shake

utensils YIELDS 1 shake
clock PREP TIME
clock COOK TIME
clock TOTAL TIME

  • handful kumquats, washed, sliced, with seeds removed and juice squeezed out
  • juice from 1/2 navel orange
  • 1 cup frozen mango
  • 1/2 frozen banana (or sub cauliflower for a lower sugar option)
  • 1 scoop vanilla protein powder (optional)
  • 1 cup + more to reach desired consistency almond milk
  • dash cinnamon
  • hemp hearts

Directions

1. Add all ingredients to a blender and blend until well combined, adding more almond milk as needed to reach desired consistency.
2. Top with hemp hearts and kumquat slices and serve immediately.
