Indian spiced roasted chickpeas

These crispy, seasoned chickpeas are so delicious and easy to make. It makes for a great pre-dinner snack or  goes perfectly with cold beer during Happy Hour. Try it next time you have friends over for a party!

Indian Spiced Roasted Chickpeas

One can organic chickpeas, washed thoroughly until water is clear and drained

1 tsp ground cumin

1 tsp ground coriander

1/4 tsp cayenne pepper

1/4 tsp fennel seeds

1/2-3/4 tsp sea salt

1 tbsp chickpea flour or regular white flour

1 tbsp extra virgin olive oil

Preheat the oven to 400 degrees F.

Dry the chickpeas thoroughly with paper towels. In a medium bowl, add the chickpeas, salt, and the spices and toss well to mix. Add the flour and toss again. Add the oil and mix well.

On a baking tray lined with parchment paper, spread the chickpeas out evenly. Bake 15 minutes, then take out and stir to even the sides. Bake another 10-15 minutes, and serve hot. (This is best eaten just out of the oven).
