Healthy Snacks: Vegan Cowboy Caviar

Healthy Snacks: Vegan Cowboy Caviar
Cowboy caviar. Even if it didn’t taste absolutely wonderful, I’d still eat it, because the name indicates that this is an unpretentious food for tough cowpokes with a sense of humor.

This is the perfect way to enjoy fresh veggies from the garden (with avocados and lime from the store if your are a North-Eastern Cowgirl such as myself). The dressing will make it difficult to stop snacking. This is the kind of snack you can pair with side items to make a satisfying meal.

Secure the lid, shake it up for 15-25 seconds. Pour over the veggies, and then combine until everything is well coated. Put your boots up, and dip away with your favorite tortilla chips.
