Freedom Friday: Ultimate Spinach Salad

In life and in food if there is something that grabs me it is color, and lots of it. I have never understood eating blandly-colored food. We eat first with our eyes, yes? So why not feast our eyes on something delicious and let our taste buds do the hack work? Spinach alone can be boring to gaze upon, but not if you add some of the most vibrant colors known to the world- bright reds, yellows and even some bright oranges make an appearance in this feast-worthy, main dish salad!

Ultimate Spinach Salad

Serves 2 Hungry Eaters

6 cups of raw spinach, cleaned and patted dry

1 cup sun-dried tomatoes

2 large tomatoes, cleaned and sliced thick

2 large bell peppers, slice lengthwise then cut in half

2 allergen-free veggie burgers (like these from Sunshine Burger!), grilled and sliced thin

4 heaping tbsp. nutritional yeast flakes

Infused olive oil (we chose the Harissa olive oil from The Crushed Olive!)

Ground Black Pepper

Sea Salt

 

Divide and layer all dry ingredients (except sun-dried tomatoes) with the burgers and sliced tomatoes as the base

Add sun-dried tomatoes on top

Drizzle olive oil and balsamic on the salad and plate edges, sprinkle with sea salt and black pepper

*We added grilled tofu and vegan “bacon” bits to Chris’ salad –but these ingredients are in NO WAY allergen-free.*
