Vegan Mocha Chocolate Chip Scones

I didn’t properly make acquaintance of scones until I moved to the East Coast. There must have been scones in the Northwest, too, but it’s a far less biscuit-y place. (More donut-y, I think….amiright?) When I tasted my first proper vegan scone, however, I was hooked! The perfect scone recipe doesn’t fall apart all over the place like a muffin, and feels lighter than a cookie. In short, it is the perfect afternoon treat. Alas, many vegan scones recipe fall short of this gold standard–dry, heavy, and dense. Most of all, they usually don’t have enough “stuff” inside. Like, would it kill you to put more chocolate chips??

If you have a fear of making scones for above reasons, try this St. Patrick’s Day inspired recipe. These delightful mocha chocolate chip vegan scones are crumbly on the outside, and moist and light on the inside, with subtle coffee flavor harmonizing with plenty of chocolate chips.  Enjoy with a cup of tea–or a tall glass of almond milk, like I did. 🙂

Vegan Mocha Chocolate Scone

4-5 small scones

1 tsp flax meal

1.5 tbsp water

1 cup flour

2 tbsp sugar

2 tsp baking powder

1/3 cup vegan butter

1/2 cup chocolate chips

2 tbsp almond milk

4 tbsp coffee

2 tbsp cocoa

pinch of fine salt (optional)

1. Heat oven to 325 degrees F.

2. In a small bowl, whisk together the flax and water. Add almond milk and 2 tbsp coffee. Set aside.

3. In a large bowl, mix together flour, baking powder, cocoa powder, sugar, and salt (if using). Add the vegan butter, cutting it up with a fork. It doesn’t have to be perfectly blended in, but has to be broken into little pea-sized pieces and look crumbly inside the flour.

4. Add the chocolate chips and the flax/milk/coffee mixture into the large bowl. Mix together with a spoon until just incorporated. Add 1-2 tbsp of coffee if needed. The dough will look a little crumbly, separated, and not smooth like cookie dough.

5. Using your hands, shape the dough into 1/2″ thick triangular shapes (about 3.5″ at the longest side). Place on tray lined with parchment paper. Bake at 325 degrees for 12-14 minutes. The crust will look nice and crispy when they’re done. Enjoy!!
