Easy, Healthy, Delicious & Filling—3 Vegan Breakfasts You Can Prep In Advance

Breakfast can make or break your day. As you have been fasting overnight for (hopefully) 8 or more hours, the first meal of the day is essential and can help to start your day off on the right food. It’s super important to refuel and put some nutrients in your body. But I know, most of us have about three minutes to think about breakfast in the morning, and if there is nothing in your belly before you leave the house or when you get to the office, it’s tempting to just grab some junk food. These three easy vegan breakfasts below, however, are easy to prep one day (or multiple days!) ahead of time, and they will guarantee that you rock your breakfast game!

1. Peanut Butter Cherry Overnight Oats

3 Easy Breakfast Recipes That Can Be Prepped Ahead
Makes 1 serving
Ingredients:
– 1 cup of oats
– 1 cup almond milk
– 1 teaspoon granulated date sugar
– 2 tablespoons dried cherries
– 1 tablespoon peanut butter
Directions:
Just grab a mason jar and add all ingredients. Stir well and close the lid. Keep in your fridge for up to 3 days.

2. Green Smoothie in a Bag

Acne Fighting Green Citrus Smoothie

Each bag makes one smoothie.

Ingredients:
– 1 ripe banana
– 1 cup kale
– 2 pitted Medjool dates
– 1 pinch of ginger
– Coconut Water
Directions:
Just add all the ingredients, except for the coconut water, to a reusable plastic bag. Make multiple bags at once and freeze at least overnight. In the morning, just put all the ingredients in a high-speed blender and add coconut water (add less if you want the smoothie to be creamier) and blend for 1 minute. Et voila!

3. Granola

Vegan Breakfast Recipes: Banana Nut Granola
Makes 2-3 servings
Ingredients:

– 2 cups quick oats

– 1 cup chopped dates

– 1/2 cup pepitas

-1/2 cup raisins

– 1 tablespoon vanilla extract

– 1 tablespoon cocoa powder

– 1 tablespoon coconut syrup
Directions:

Mix all ingredients in a bowl. Then bake at 375°F for 10-12 minutes. Store in the fridge in a mason jar and enjoy in the morning with some oat milk.
