Healthy Dinner under 500 Cal: Vegan Shaved Asparagus Salad

vegan raw asparagus fava bean saladNothing says spring-summer to me like seeing lovely bunches of asparagus at my local farmer’s market. They’re delicious grilled, roasted, or sauteed, but using them in a salad is the perfect way to enjoy them in 90 degree weather. Look for medium to thick stalks as these will be easier to turn into ribbons. Also, Asparagus is packed with iron, vitamin B, and vitamin K. Add a slice of toast and soup to this salad for the perfect light summer dinner. Bon appetit!

Farm Greens and Fresh Fava Bean Salad with Asparagus Ribbons

Makes 2-3 servings

10-12 stalks asparagus

1/2 cup shelled fresh fava beans

4 cups arugula

1/4 chopped walnuts

(dressing)

1 tbsp extra virgin olive oil

2 tbsp Champagne vinegar

1 tsp Dijon mustard

salt and pepper to taste

1. Use a vegetable peeler to carefully shave asparagus stalks, making “ribbons” of about 1/16″.

2. Put all the salad ingredients into a big bowl. Whisk the dressing ingredients in a smaller bowl, and pour into the salad. Toss well and enjoy!
