Sweet Summer Salad with Poppy Seed Dressing

Summer is the best. There is so much fun to be had outside in the ocean, on lakes, in rivers and in the mountains, and the days never seem long enough.

Food never tasted so good, either. Sun-kissed and sweetly spent, nothing is as satisfying as an effortless salad tossed together from the garden or the farmer’s market.

This is one such salad recommended for a blissful day between the dock and the bonfire.

Sweet Summer Salad with Poppy Seed Dressing

Big bowl of baby kale, or greens of your liking

1 Fennel bulb, shaved or thinly sliced

One quart of strawberries, sliced in to quarters

3/4 cup raw sunflower seeds

Handful of mint, chiffonaded

Poppy seed dressing:

2 T olive oil
2 T vegan mayo
2 t Dijon mustard
2 T apple cider vinagar
1 T maple syrup
1 T finely chopped shallots
1 T poppy seeds
A good dash of pepper and garlic powder to your preference

Combine dressing in a mason jar. Screw on lid and shake it up until the dressing is creamy. Toss on veggies and seeds. Mmmmmm, mmmmmm.
