Raw Vegan Chocolate Peppermint Avocado Pudding

If I had to pick the perfect dessert, this raw vegan chocolate peppermint avocado pudding would be it. It has all the tastes and textures I adore: smooth and creamy, light and fresh, and chocolate-y (duh). Plus, it’s made with whole food ingredients and zero refined sugar. If you’ve never tried avocado pudding and are a bit trepidatious, be assured that you cannot taste the avocado in this recipe! This pudding is perfect any time of year, but it would be especially appropriate this month, during holiday festivities. It’s great as a snack, for dessert, or even as a palate cleanser between appetizers and entrees during a special meal. I hope you enjoy it as much as I do, and that you make it again, and again, and again…

Raw Chocolate Peppermint Avocado Pudding

Serves 2-4

1 medium to large avocado

5-6 medjool dates, soaked for at least 4 hours

4 tablespoons raw cacao powder (alternatively, you can use regular cocoa powder, but it will no longer be raw)

1/2 cup water

1/4 teaspoon peppermint extract

Directions: Place all ingredients in a food processor or high speed blender and blend until completely smooth. Serve!
