Raw Buckwheat Parfait with Maca Chia Pudding: a beautiful way to begin your morning–or end your day!

Parfaits are the ultimate pretty breakfast food—and with a little advance planning, they’re hardly any effort. This raw version is packed with superfoods—including berries, chia seeds, and maca powder—not only is it almost too beautiful to eat, it’s also beautifying.

Full of fiber and topped with fruit, this yummy cup will stick with you through the morning while satisfying your sweet tooth—no need to reach for that mid-morning vegan doughnut!

Dubbed “Peruvian ginseng,” maca is related to the turnip. Maca is rich in vitamins B, C, and E as well as minerals iron, calcium, phosphorous, zinc, and magnesium. Increasingly popular with vegan athletes for its recovery-boosting quality, this adaptogen helps regenerate the adrenal glands and restore hormonal balance following stress. Maca may also ease symptoms of menstruation and menopause—including cramps and anxiety. Last but not least, this hardy plant boosts libido in both men and women. Raw Buckwheat Parfait with Maca Chia Pudding

My fiancé’s scotch glass was the perfect size for this parfait. It seems fitting since maca naturally has a “malted” taste.

Raw Buckwheat Parfait with Maca Chia Pudding

Ingredients:

(Serves 1)

¼ cup raw buckwheat groats, soaked overnight (Place groats in a jar and cover with water. Store in the fridge until morning, then rinse well.)

(for chia pudding):

1 tbsp. chia seeds

3 tbsp. vegan milk

1 tsp. raw maca powder

¼ tsp. vanilla extract

stevia to taste

(optional additional toppings—mix and match, customize, etc.):

fresh berries

sliced banana

dried fruit

cacao powder to garnish

flax seeds

almond slivers

nut butter

avocado

dark chocolate chips

smoothie

shredded coconut

cinnamon

Directions:

To make chia pudding: mix all ingredients in a small container and store in the fridge for about 15 minutes. The chia seeds will form a gel out of the liquid, creating a pudding.

Mix buckwheat and chia pudding. Layer fruit and extra ingredients in a way that pleases you!
