Vegan Soup Recipes: Sesame Red Pepper Soup

According to food historians, the history of soup is probably as old as the history of cooking. As something that is easily digested and believed to have healing powers, it was prescribed for a number of various ailments since ancient times. Over the past several months, both best friend and my grandmother had spent time in the hospital recovering from surgeries. The body is very sensitive after surgery, and good food is essential to a successful recovery. Soup is a perfect healing meal because it is easy for the body to digest. Being that it's almost summer, I thought a cold soup would fit with the season and offer something slightly different.
This soup is light, refreshing, and chock full of garlic, which is associated with several healing properties. Garlic is rich in antioxidants, which help reduce inflammation and the risk of developing cancer. This mighty, immunity-boosting bulb may also help reduce the severity of a common cold.
When choosing your produce, opt for locally grown organic when possible, especially in this case since we are eating them raw. This refreshing red pepper soup is so easy to make--all you have to do is add a little love and intention and you have yourself a nourishing meal.

  • 3 red bell peppers
  • 4 cloves garlic
  • 1 cup vegetable broth
  • 2 tablespoon tahini
  • to taste sea salt

Directions

1. Put all ingredients into your blender and blend until smooth. 2. Refrigerate for 1 hour before serving. 3. Optional: Top with your favorite extras like chopped kale or crumbled tofu.
