Carrie Underwood's Go-To Vegan Meals Are Totally Relatable. Come See!

Country music darling Carrie Underwood is one of the many svelte stars to swear by a plant-based diet. Underwood has been a vegetarian for many years (and was inspired to give up meat after seeing her parents castrate calves). Recently, she’s been making the transition to a fully plant-based lifestyle. Thankfully, her hometown of Nashville is a haven for lovers of local and vegan bites!

The 7-time Grammy winner may be known for her goose-bump-raising ballads, but her meals tend to be simple and down-to-earth. Here’s a peek at the singer’s favorite vegan foods!

As Underwood told Rachel Ray Magazine, she enjoys making a savory breakfast—after rehydrating with water, of course. “I scramble tofu with onions, peppers, and spinach and top it with salsa. I’ve been a vegetarian for years, but I recently became vegan.” While breakfast is normally enough for Underwood, she packs a bag of almonds with her in case she need an emergency morning snack. She also loves Raw Revolution bars, which are made with hemp protein, flax seeds, fruit, and nuts. The singer can also be found noshing on homemade muffins, which often include a mix of oatmeal and fruits like banana and blueberry.

Carrie Underwood Lives On These Healthy Plant-Based Meals

Underwood prefers to pack a homemade lunch on workdays in the studio but occasionally resorts to a Subway Veggie Delite sandwich, which entails lettuce, tomatoes, cucumbers, green peppers, and red onions on a 6-inch loaf of 9-grain wheat bread. (I basically survived on some version of this when traveling cross-country in a moving truck and stopping at restaurants in town was not an option! It’s pretty good!)

For home cooked meals, the singer relies on a mix of fresh produce and handy vegan staples. “Doing the weekly shopping, I stock up on stir-fry kits, Amy’s meatless burgers, and armloads of onions and garlic. I put onions and garlic in everything.”

She and husband Mike Fisher also enjoy vegan quesadillas: “I use Daiya vegan cheese to make a quesadilla filled with beans and lentils. It’s funny: I ate tons of fried food as a kid, but my diet is so different now. It’s worth it–I feel great.”
